(in case you are installing the highway officer replacement use this path instead)

Grand Theft Auto V\mods\update\x64\dlcpacks\patchday3ng\dlc.rpf\x64\models\cdimages\patchday3ng.rpf

And in

Grand Theft Auto V\mods\x64e.rpf\models\cdimages\pedprops.rpf for the props
